Mocha Chia Pudding

My husband loves mocha yoghurt. I made this mix of chia pudding with oats and mocha yoghurt. It was yummy.

Chia seeds are very healthy and full of calcium, iron, magnesium and rich in fibre, among other benefits.

It is a superfood, with a good rhythm, it is getting popularity in many households.

I started experimenting with it not long ago and until now, I am very pleased with the recipes that have come up.

To get a very nice texture in the pudding you need to soak the chia seeds in water, milk or any liquid of your liking.

We use in our house different types of yoghurt including flavoured, natural, greek, coconut and you can mix the chia seeds with almost any flavour.

Also, you can blend the pudding with fresh or frozen fruit, you will have a very delicious chia pudding of many different flavours.

What if I can’t find mocha yoghurt?

You can make the chia pudding with espresso coffee, sweetener and some chocolate powder. When it’s ready you can add the yoghurt.

I normally don’t add sugar, but if you like it sweet you can add the sweetener of your choice, depending on the yoghurt you choose.

I would recommend honey or maple syrup if using some sweetener.

I add oat to this pudding to make some layers and it turns out nice.

You can soak the oats as well if you prefer, either for a few minutes or overnight.

Ingredients


1 ½ cup milk of your choice or water or a mix of both (half-half)
6 tbsp chia seeds
200 gm mocha yoghurt (see notes)
4 tsp rolled oats
20 gm Chocolate dust, grated chocolate or finely chopped

Preparation

  1. Put the chia seeds in the 1 ½ cup of milk, water or a mix of both.
  2. Add honey or sweeter (if using)
  3. Stir it, then mix again after a few minutes.
  4. Put in the fridge to set 30 minutes minimum.
  5. Mix the chia pudding with the yoghurt. Let it set in the fridge longer if needed.
  6. To serve in a glass, make layers putting a couple of spoons of the pudding then add some oats and pudding again, as many times as you want.
  7. Top with chocolate dust or grated chocolate.

Notes

To make chia seeds with mocha flavour, soak the chia seeds in one or two expressos. Depending on how strong you want it.

Add sugar, honey or maple syrup to sweeten it.

Add 1 teaspoon of chocolate powder and mix well.

Let it set in the fridge until getting the consistency desired.
